Sight:
Our vision is the first sense to come into play. We can detect all the vibrant spectrum of colors and intensity within a wine and, as well as the "lagrima" or "legs". To most appreciate these aspects, the glass must be clear and free of any decoration or defects, you should be in a well lit area and able to hold the glass against a white background.
Smell:
Aroma is vitally important when evaluating a wine, as it can be used to detect both virtues and defects. First, evaluate the port's bouquet before the wine is swirled in the glass to asses the volatile aromas. Then after swirling the wine to release the more delicate aromas, the full complexity of the Port's bouquet can be experienced. Spices, fruits, flowers and roasted coffee are just some of the aromas that might be detected. The ideal glass should have a tulip shaped bowl, making it easier to swirl the wine and to concentrate its aromas.
Taste:
This is the ultimate stage of wine appreciation, when the impression gained through sight and smell are tested. Aside from the basic flavors: sweetness, saltiness, acidity, and sourness, a wine's astringency (sense of dryness and bitterness), structure (complexity), and finish (aftertaste) can be assessed.
